Ingredients:
1 kg of Crocodile whole body or cheeks
Cut into strips
200 grams of butter
1/2 cup green onions (chopped)
1/ 4 cup parsley (chopped)
3 cloves garlic (minced)
4 stalks celery (copped)
1/2 cup red bell pepper, seeded and chopped
1/2 cup green pepper, seeded, and chopped
2 large cans of stewed tomatoes
1 teaspoon grounded cayenne pepper
1 teaspoon grounded black pepper
1/2 teaspoon salt
Method:
Saute onions, garlic, pepper and celery in butter until soft add others ingredients and simmer 10 minutes in large covered iron pot. Cook for 10 min add the Crocodile strips allow to cook over low heat until tender(hour) if to gravy is too thick add hot water.
Serve with basmati rice or with hot buttered bread on the side.
